George Frideric Handel’s “Music for the Royal Fireworks” provided the inspiration for our first-ever pink bubbles. Fireworks is made in a similar fashion as our still estate Rosé of Pinot Noir, Prelude. It’s composed entirely of Pinot Noir from the Bells Up Vineyard: Dijon clone 113 (36.5%) and 667 (31.7%), and heritage clone Pommard (31.8%). After 48 hours of skin contact, the free run was siphoned off, then fermented to dry. The wine is put through a full malolactic fermentation and lees stirring regimen to smooth its acidity and soften its mouthfeel. Then it’s lightly dosaged and sparkled.
